Thokku, is a traditional dish which is used as a side dish for any kind South Indian cuisine like SAMBAR RICE , CURD RICE , and Any kind of VARIETY RICE....
This TOMATO - GARLIC THOKKU can be used as a PICKLE, as a RICE MIX PASTE , and also you can serve this with CHAPPATHI , DOSAI , IDLY , POORI etc.....
So here we go below is the list of ingredients we need to make this yummy recipe....
INGREDIENTS :
Tomato : 1/2 kg
Garlic : 100 gms
Tamarind : A small lemon size
Chilly powder : 1 teaspoon
Salt : 1 teaspoon
Refined Sunflower oil : 50 ml
FOR TEMPERING :
Mustard Seeds : 1/2 teaspoon
TO ROAST AND GRIND :
Fenugreek / Methi seeds : 1/4 teaspoon
Asafoetida / Hing powder : 1/2 teaspoon
Method of Preparation :
1. In a pan dry roast the Fenu greek / Methi seeds until it turn golden brown
2. If you are using Compound Asafoetida then dry roast it for few min , in case if you are using Asafoetida Powder then you don't need to dry roast it
3. Now grind the roasted ingredients in to a fine powder.
4. Now take a heavy bottom pan , in that add the oil and allow it to heat up , here i have used Refined Sunflower oil , if you wish you can use Gingelly oil, that will give you more authentic flavor to the recipe.
5. On the other hand grind Tomato and Tamarind into a fine paste , You don't need to filter it.
6. Once the oil heats up , add the mustard seeds and allow it to splutter completely .
7. Now add the garlic cloves , on medium flame cook it until it turns light golden brown color.
8. Now add the grounded paste and mix it well.
9. Add the Red chilly Powder and salt and mix it well and allow it to boil
10. Once it starts to boil , lower the flame completely and cover it with lid
11. After 5 - 10 min , add the roasted powder and mix it well and again cover it with lid
12. Once oil starts to ooze out from the mixture , switch off the flame and allow it to cool down completely.
13. Now the TOMATO - GARLIC THOKKU is ready to serve
As i already mentioned above this can be used as a pickle .
To use this as a RICE MIX PASTE , Take required amount of thokku and add it to the Hot steaming rice and mix it well.... If you wish you can some gingelly oil on top of it this will enhance the taste ....
And also you can use this as a side dish for CHAPPATHI , IDLY , DOSAI, POORI..... etc
