         Brinji Rice is one of the famous Variety rice Recipe in SOUTH INDIA . Every marriage function menu will have this recipe .... Very easy to make, But most of the time we wont get the exact taste like what we eat in marriages... Here i have the solution for this problem..... Am going to give you the exact Ingredients, Measurement, and Method to prepare this Exotic recipe.... So here is the list of ingredients which we need to make this recipe... 



 
 INGREDIENTS:

Basmati Rice:  2 cups
Tomato : 3 Medium size (diced)
Onion : 2 Big size (sliced)
Ginger Garlic paste : 2 tablespoon
Green Chillies : 4 
Coconut Milk : 1 Cup
Red Chilly Powder : 1/2 teaspoon
Turmeric powder : 1/4 teaspoon
Mint leaves : A handful
Coriander Leaves (chopped) : A Handful
Curd / Yogurt : 2 tablespoon
Salt : To taste
Oil : 4 tablespoon
Water : 2 cups

FOR TEMPERING :

Cinnamon: 2 inch piece
Cloves: 4
Cardamom Powder: A pinch
Bay leaves : 2

METHOD OF PREPARATION :

1. First Wash the Basmati Rice and soak the rice for Min. 30 mins

2. To soak the rice , here i have used 2 cups of water and 1 cup of coconut milk.. ( Here i have taken 2 cups of basmati  rice, usually we have to use 1: 1.5 Ratio to cook the rice i.e, to cook 1 cup of Basmati Rice we have to use 1 and Half cup of water... So according to the Ratio for 2 cups of rice i need 3 cups of liquid to cook it... That's why i have taken 2 cups of water and to enhance the taste i used 1 cup of coconut milk  )

3.  In a Wide mouth vessel add 4 tablespoon of oil and allow it to heat up, if you want you can make this recipe using Ghee / Clarified butter instead of oil....

4. Once the oil heats up add the cinnamon stick, cloves , cardamom powder and bay leaves and fry it for few mins

5. Now add the sliced onions and saute it until it turns golden brown

6. To fasten the cooking of onions add a pinch of salt , and saute it

7. Once the onions turned golden brown add ginger garlic paste and cook it until the raw smell goes off

8. Now add the green chillies along with the mint leaves and saute it for few mins

9. Now add the sliced Tomatoes and half the amount of chopped Coriander leaves and saute it until the tomatoes turns mashy 

10. After few mins, the oil which we add will start to ooze out from the gravy , at this stage add the dry ingredients i.e, Red chilly powder and turmeric powder and saute it for few mins

11. Now add the curd / yogurt to the gravy and mix it well....

12. At this stage add required amount of salt for the gravy as well for the rice and mix it well

13. Now add the Soaked rice along with the liquid and mix it well...

FOR DUM PURPOSE :

While the rice is cooking, place an Iron dosa Tawa in the small burner and allow it to heat up....

Once the rice is half done place the vessel over the TAWA  and add rest of the coriander on top of it and cover it with a lid and place a weight over it to intact the heat inside the vessel.... ( Here i have used an  IRON MORTAR for weight , if you don''t have any heavy weight apparatus, you can place a large bowl of water over it)

Now completely lower the flame and cook it for 10 to 15 min .... 

Now our Exotic BRINJI RICE is ready to serve..... 

You can serve it with Onion Raita,  Potato fry or simply with Potato chips.....
