Today we going see about the traditional way of preparing PARUPPU PODI... As
you all know paruppu podi is made out of Toor dhal which is highly rich in protein...
Every South Indian vegetarian feast will start with this PARUPPU PODI....
On Top of Hot steaming Rice add PARUPPU PODI and a teaspoon or two
Ghee / clarified butter, When mixing these three ingredients will give you the
Mouth Watering Paruppu podi sadham........
So lets see how to make this .... Below is the list of ingredients we
need........👇👇👇
INGREDIENTS:
Toor dhal : 2 cups
Black Pepper Corns : 2 tsp
Dry Red Chilly : 4- 6 (as per your taste)
Asafoetida / Hing Powder : 1/4 tsp
Curry Leaves : 25 to 30 leaves
Salt : To taste
Method Of Preparation :
1.Take a heavy bottom pan , add the toor dhal to it and start to roast it in low to medium flame
2. Once it start to release the aroma ( Say after 2-3 min ) Add the rest of the ingredients i.e , Black pepper corns, Dry red chilly , Asafoetida / Hing powder and curry leaves.
3. Roast the ingredients until the Toor dhal turns Golden Brown.
4. Here i have given 4-6 dry red chillies in the ingredients list, add the chillies as per your taste, if you want your Paruppu podi with mild hotness then add 4 chillies...
5. The main key point to get the perfect traditional paruppu podi is the roasting time, You have to roast the ingredients in low to medium flame continuosly , then only all the ingredients will roast uniformly...
6. Once the toor dhal turns golden brown add the required amount of salt and mix it well ,Now switch off the flame and allow it to cool down completely...
7. Once the ingredients reach room temperature, grind it into a fine powder...
8. Now the authentic PARUPPU PODI is ready.....
You can serve this with Ghee / Clarified butter for White rice.... And you can also use this as
Idly milagai podi / Gun Powder , Take required amount of paruppu podi in a bowl and add Gingelly
oil and mix it well.. Now it is ready to serve with Hot steaming Idly or Crispy Dosai...
