Today We going to very spicy side dish for all the South Indian Break fast Dishes ......
If you are a spicy food lover then this dish is surely going to have a permanent place in
your favorite dishes.
So what we going to see today is none other than very famous KAARA CHUTNEY.....
This chutney will go well with IDLY , DOSAI , POORI , PONGAL , KICHDI , UTHAPPAM etc....
Below is the list of ingredients you need to make this recipe....
INGREDIENTS
Chopped Tomato - 1/2 cup
Chopped Onion - 1/2 cup
Bengal gram dhal - 1 tablespoon
Urad dhal - 1 tablespoon
Dry Red chilly - 4 to 5
Garlic - 4 cloves
Salt - To taste
Oil - 1 tablespoon
Water - Optional
For Tempering
Mustard seeds - 1/4 teaspoon
Urad Dhal - 1/4 teaspoon
Curry Leaves - A few
Oil - 1 teaspoon
Method of Preparation
1. Roughly chop the onions and tomatoes
2. In a pan add 1 tablespoon oil , you can use any oil of your choice.... and allow it to heat.
3.Once the oil heats up , lower the flame completely and add Bengal gram dhal and urad dhal and
fry until it turn golden brown.
4. Now add the dry red chillies and garlic cloves and fry it for few secs, Here i have given 4 to 5
no' of dry red chilly , add it as per your taste but dont add less than 4 no's .
5. Now add roughly chopped onions and saute it until it become translucent. At this stage you can
increase the flame to medium - high.
6. Add salt to taste at this stage . It will bring out the sweetness from the onions and also it will help
to fasten the cooking.
7. Now add the roughly chopped tomatoes and saute it until it become mashy.
8. Once the tomatoes turn mashy , then turn off the flame and allow the mixture to cool down.
9. Once the mixture reached room temperature, transfer it to mixer jar and grind it into fine paste.
10. If you felt the dhal is not grinding into fine paste, then you can add little water to grind it. If you
like your chutney to be little coarse then you dont need add extra water.
11. At this stage check the salt, if needed you can add while grinding itself.
12. Now transfer it to a bowl.
13. For tempering , in a tadka pan add 1 teaspoon oil and allow it to heat up , once it heats up add
mustard seeds and allow it to splutter completely , then add urad dhal and curry leaves fry it for few
secs and transfer it to the chutney and mix it well.
14. Now KAARA CHUTNEY is ready to serve....
